  2. Put aubergine in a bowl. Add passata, half the feta, a little salt and mix
  3. Grease individual ramekins with a little oil. Add mixture and top with remaining feta. Sprinkle with oregano and bake for 10-12 mins

Spoon over a quarter of the spiced passata, then crumble over a quarter of the feta cheese. Repeat the layering till all aubergine, sauce and feta have been used. Pour stewed tomatoes over eggplant in an even layer, then feta, parsley and cilantro (in that order). In a small bowl, combine eggs, onion, salt, pepper, allspice, oregano, sage and cayenne. Pour evenly over items in casserole dish.
